The history of this centuries-old dish has its origins in the Lazio pastures during the transhumance. The shepherds of Agro Romano used to eat spaghetti (to ensure a solid supply of carbohydrates and calories), seasoned with pepper (stimulating heat receptors) and aged cheese. Andrea wanted to reinterpret this ancient recipe, finding a trait d union with its origins divided between North and South.
The undisputed star of the dish is a very high quality blue cheese, whose sparkling notes are enhanced by the sweetness of Sichuan Pepper and at the same time rounded by the soft notes of a white cream of milk and cream.
